2 oz - Virtue Cider The Mitten Bourbon Barrel Aged Cider
1 oz - Apple Pie Liqueur - made with Rhine Hall Oak Aged Apple Brandy + Virtue Cider + Almond Extract + Vanilla Bean
0.5 oz Fresh Lemon Juice
0.25 oz Honey-Thyme Syrup
5 dashes Angostura Bitters
2 dashes Regan's Orange Bitters

 

“PISTIL WHIP”

Allison June Mitchell, Chef’s Special

2 oz gin
.75 oz Virtue Cider Brut reduction
.75 oz lemon
.25 oz Apologue saffron
.25 oz Virtue Cider Flok ice cider
1 oz aquafaba, whipped to form a meringue/foam
Spray of angostura bitters though a stencil for design on the meringue

KOVAL Rye
Dry vermouth
Apple-chai spiced demerara syrup made with Virtue Cider Brut
Garnish with a dried apple and orange slice

.25 oz Virtue Cider Flok ice cider
.75 oz Rhinehall Pear Brandy
.75 oz KOVAL Rye
1 oz honey/thyme/manzano syrup
1.5 oz Virtue Cider Brut cider

1oz Star Union Spirits Cherry Brandy
1 oz Star Union Spirits Gold Rum
.25 oz salted demerara
.5 oz lemon juice
2 oz Virtue Cider Brut
Pineapple foam topper
Dehydrated cantaloupe
Cheese powder

 

“POSH SPICE”

Lucy Corbin, Estereo

1.5 oz KOVAL Rye
.25 oz Averna
.5 oz lemon juice
.25 black cardamom/cinnamon simple syrup
.75 Mission fig reduction
2 drops orange blossom water
small pinch Maldon salt
Virtue Cider Brut to top

Shake, strain, rocks, top with Virtue Cider Brut cider, roll twice to combine
Garnish with a burnt cinnamon stick

 

“FLOK OF EAGLES”

1.5 oz Virtue Cider Flok ice cider
1 oz bourbon
.25 oz King’s Ginger
1 oz Fresh Lemon juice
.5 oz Virtue Cider The Mitten simple syrup
Scrappy’s Firewater tincture

Ice cube garnish
50% cherry cider
50% Hibiscus tea

 

“PINKS, GREENS, PURPLES”

1.5 oz Rhine Hall Pear Brandy
.75 oz Punt E Mes
.75 oz simple syrup
.75 oz lemon juice
2 oz Virtue Cider Brut

Served on ice, Collins glass, garnished with orange peel.

1 oz Mezcal
.75 oz Blood Orange Syrup with Cinnamon and Clove
.25 oz Lemon Juice
3 oz Virtue Cider Rosé

.25 oz Tart Cherry syrup
.5 oz Grappa
1 oz Star Union Spirits Cherry Brandy
4 oz cherry cider, frozen (for shaved ice)

It's a shaved ice cocktail with the cider as the ice. Everything is built in the glass and topped with the ice and a spoon.
