Named for the fantastic fox that loves cider, Le Renard is an apple wine made with local heirloom apples that are pressed and fermented on riesling grape skins. Once it is in bottles, Le Renard goes through secondary fermentation and ends up a dry, bubbly, sparkling apple wine with notes of white wine, banana and pineapple.
Seeing the world through rose colored glasses is sometimes how the greatest ideas come about. Imagination and optimism bring on innovation. Lunettes Roses is made by fermenting heirloom apple cider and then aging it on whole cherries for three weeks. Once it is in bottles, Lunettes Roses is bottle conditioned and ends up a dry, bubbly, sparkling pink apple wine with notes of raspberry and grapefruit.
