Percheron 2021

The Percheron is the great cider horse. They would pull the apples from the orchard in their cart and then turn the stone auges to press the cider. This Norman-style blend of last season's high-acid Michigan apples is aged in French oak, refermented with Brettanomyces, then aged again in red wine barrels.
